Instant Microwave Pizza

  • pre made pasta sauce

    I call this recipe "Microwave Pizza" because I bake it in my combi-microwave. But I bake all my pizza in there so it's a bad name ig. This is a recipe for a baking powder leavened pizza base instead of regular yeast. The taste is similar to a cheap frozen pizza, with a denser crumb. Makes a big 30cm pizza.

    In a bowl add self raising flour , salt and optionally ascorbic acid (vitamin c) for more airy crumb and wheat gluten to strengthen the weak cake flour. Mix well, especially if you're using the gluten.

    Add water and knead until just combined. Dump onto the counter and use the bowl you used as a lid. Let it rest for a few minutes to make kneading easier. You can use this time to grab your toppings from the fridge and grate some cheese.

    Knead the dough a bit until more elastic. When using gluten it will feel nice and bouncy, but if not then it's okay if its not as subtle as you'd like. Flatten the ball into a puck and let rest under the bowl a few more minutes.

    Oil the bottom of your microwave pizza tray thing, put the dough in and work it into a circle. A little bit of oil here helps you to get nice browning at the bottom.

    Dump half a jar of pre made pasta sauce on top. This is a lot you might want to use less. Add toppings and cheese. Make sure you don't put too many toppings on, the pizza is already iffy as is.

    Bake on the microwave+grill (pizza) setting for 15 minutes.
